Asparagus

Asparagus is a harbinger of spring and a famous Istrian speciality. It is most often prepared with eggs, homemade pasta and rice, or as an addition to other traditional Istrian dishes. Besides its unique taste, it is famous for its healing qualities. Visit one of the many Istrian inns and definitely taste some of the dishes made from wild asparagus.

Istrian soup

Istrian soup is an Istrian culinary speciality. Istrian soup is made from red wine (Teran or Borgonja), sugar, olive oil, pepper and toasted slices of bread. This unique Istrian speciality is prepared and served in an earthenware jug called a “bukaleta”. Istrian soup used to be a dish for those working in the fields, but today it is offered in almost all Istrian inns and restaurants.

Ravioli, “pasutice”, “fuži” or macaroni

Ravioli, “pasutice”, “fuži” and macaroni are only some of the types of pasta that are prepared in Istrian homes. Most often they are served with fine sauces, or as a side dish. Try the fuži with truffles, the ravioli with wild asparagus, the macaroni with prosciutto, the pasutice with dried cod, or the meat and fish specialities that are served with homemade pasta. Grilled gilt-poll, bass or sole

Whilst on holiday in Istria you should definitely try one of the many fish specialities and discover why white fish from the Adriatic sea is considered to be some of the tastiest fish in the world. Taste some grilled gilt-poll, bass or sole accompanied by some famous Istrian olive oil, garlic, and parsley, and have fun with friends in the comfortable atmosphere offered by the restaurants and inns in Vrsar and the surrounding areas.

Scallops, mussels or oysters

The underwater world of Vrsar and surrounding areas are filled with shell fish and some of the famous shell fish farms are also located here. Try some raw oysters with a few drops of lemon, scallops with spices and cheese or mussels prepared in a tomato sauce.
